I actually went to the Professional Regional Scouting Combines in Towson, MD in 2003. I've also attended various try-outs for semi-pro and Canadian Football League teams. Each time, even at the combine, we were allowed to do one set with 135. Then they immediately loaded 225 and you went for broke.
As far as training goes, I would recommend finding out where your athelte is right now. Test him. See where he is and then go from there. For instance, if he can already bench 225x15, he's got a good base and you can train other movements that mimic the bench (DB press, Incline BP, Military, etc.)and do them with volume. On the other hand, if he can only do 225x4...he needs work and you just can't expect him to improve a rep or two per week. I would then lower his weight to 185-200 and see how many he can get. Then build up volume from there.
Remember this...the combine is all about mastering the tests. That's all it is. I've seen guys ace the tests (40 yard dash, shuttle run, vertical jump, 225 bench press) and then trip over themselves on the football field. However, acing the combine at least gets your foot in the door. Practice, practice, practice those tests...and then practice some more!
